  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground ginger
  • Salt and pepper to taste

Instructions

  1. In a saucepan, bring 1 cup vegetable broth to a boil. Stir in 1/2 cup couscous, cover, and let sit for 5 minutes before fluffing with a fork.
  2. In a large mixing bowl, combine the fluffed couscous with 2 grated carrots, 1 can drained chickpeas, 1/2 finely chopped red onion, 1/4 cup raisins, and 1/4 cup chopped fresh parsley.
  3. In a small bowl, whisk together 2 tablespoons olive oil, 1 tablespoon lemon juice, and spices (1 teaspoon each of ground cumin and coriander; 1/2 teaspoon ground cinnamon; 1/4 teaspoon ground ginger; salt and pepper to taste) until well combined.
