  • 2 large chicken breasts
  • 500g baby potatoes, halved
  • 300g fresh green beans, trimmed
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp dried oregano
  • 1 tsp dried rosemary
  • Salt & pepper to taste

Instructions

  1. Preheat oven to 200°C (400°F).
  2. Toss halved baby potatoes in a mixing bowl with 1 tbsp olive oil, dried rosemary, salt, and pepper. Spread onto one side of a baking dish.
  3. In another bowl, mix chicken breasts with 2 tbsp olive oil, garlic powder, paprika, dried oregano, salt, and pepper. Place in the center of the baking dish.
  4. Bake for 20 minutes.
  5. Toss fresh green beans with 1 tbsp olive oil, salt, and pepper; add to the baking dish after 20 minutes.
  6. Bake for an additional 20 minutes until chicken reaches an internal temperature of at least 75°C (165°F) and vegetables are tender.
