  • ½ cup unsalted butter (melted)
  • ¾ cup raw honey
  • 2 large eggs
  • 1 cup fresh orange juice
  • Zest of 2 oranges
  • 1 tbsp grated fresh ginger
  • 2 tbsp honey (optional glaze)
  • 2 tbsp orange juice (optional glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking pan.
  2. In one bowl, whisk together the flour, baking soda, ground ginger, cinnamon, nutmeg, and salt.
  3. In another bowl, mix melted butter, raw honey, and eggs until smooth.
  4. Stir in fresh orange juice, orange zest, and grated ginger into the wet mixture.
  5. Gradually combine the dry ingredients with the wet ingredients until just combined.
  6. Pour batter into the prepared pan and bake for 40–45 minutes or until a toothpick comes out clean.
  7. Optional: Brush with a mixture of honey and orange juice while warm.
  8. Allow to cool before serving.
