  • 45 lbs bone-in chicken pieces
  • 1 cup buttermilk
  • 1 cup flour
  • 1 cup Panko breadcrumbs
  • 1/2 tsp baking powder
  • 1 tsp celery salt
  • 1 tsp kosher salt
  • 1 tsp garlic powder
  • 1 tsp black pepper
  • 1 tsp white pepper
  • 1 tsp dried mustard
  • 1 tsp paprika
  • 1 tsp ground ginger
  • 1 tsp Italian seasoning
  • 4 tbsp melted butter

Instructions

  1. Marinate chicken pieces in buttermilk for at least 30 minutes (up to 6 hours) in a sealed plastic bag.
  2. Preheat oven to 425°F (218°C) and heat a non-glass baking dish for 15 minutes.
  3. In a bowl, whisk together the coating ingredients: flour, Panko breadcrumbs, and spices.
  4. Remove chicken from buttermilk and dredge each piece in the coating mixture.
  5. Add melted butter to the hot baking dish; place coated chicken in a single layer.
  6. Bake for 12 minutes; flip pieces and bake another 12 minutes until internal temperature reaches 165°F (74°C).
  7. Let rest for 5 minutes before serving.
