1 cup baby potatoes or Yukon gold
1 ripe avocado
1 tsp olive oil or butter

1 tbsp olive oil
1 tsp smoked paprika
1 tbsp chopped tomato
1 tbsp chopped red onion or green onion
Lime juice

Instructions
Preheat oven to 425°F (220°C). Toss cubed potatoes with olive oil, smoked paprika, salt, and pepper; roast for 25-30 minutes until golden.
Season fish fillet with salt, pepper, garlic powder, and paprika. Heat olive oil in a skillet over medium-high heat and sear fish for 3-4 minutes on each side until cooked through.
