  • 1 cup crushed pineapple, drained (reserve juice for glaze)
  • 1/2 cup sour cream (room temperature)
  • 1 1/2 cups powdered sugar
  • 23 tbsp reserved pineapple juice
  • 1 tbsp melted butter for richness (optional)
  • 1/4 tsp pineapple or vanilla extract for flavor boost (optional)

Instructions

  1. Preheat your oven to 325°F (165°C). Grease and flour a Bundt pan or 10-inch tube pan to prepare it for baking.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. This should take about 3-5 minutes.
  3. Add eggs one at a time, mixing well after each addition.
  4. Stir in the vanilla extract and optional pineapple extract if using.
  5. In another bowl, whisk together the flour, baking powder, and salt.
  6. Gradually mix the dry ingredients into the butter mixture alternately with sour cream until well combined.
  7. Finally, fold in the drained crushed pineapple gently.
  8. Pour the batter into your prepared pan and smooth out the top with a spatula. Bake in the preheated oven for 75-85 minutes or until a toothpick inserted into the center comes out clean.
