  • Mini pumpkins or ramekins
  • Heavy cream
  • Granulated sugar
  • Egg yolks
  • Vanilla extract
  • Pumpkin puree
  • Ground cinnamon
  • Ground ginger
  • Salt

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Prepare mini pumpkins by cutting off the tops and scooping out seeds, or arrange ramekins in a baking dish.
  3. In a mixing bowl, whisk together heavy cream and sugar until dissolved. Add egg yolks one at a time, mixing well after each addition.
  4. Stir in vanilla extract, pumpkin puree, cinnamon, ginger, and salt until smooth.
  5. Pour custard mixture into prepared containers about three-quarters full.
  6. Fill the baking dish with hot water halfway up the sides of the containers and bake for about 30 minutes until set but slightly jiggly.
