  • 12 slices Texas toast (or French bread, or challah, or croissant halves)
  • 1/2 cup salted or unsalted butter (1 stick), room temperature
  • 1/3 cup pumpkin puree
  • 3 tbsp maple syrup (or honey)
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/2 tsp pumpkin pie spice

Instructions

  1. Heat a non-stick skillet over medium heat and melt a small amount of butter.
  2. In a baking dish, whisk together eggs, milk, pumpkin puree, vanilla extract, ground cinnamon, and pumpkin pie spice until smooth.
  3. Dip each slice of bread into the mixture until well coated and place on the skillet.
  4. Cook for about 2-3 minutes on each side or until golden brown.
