  • 2 cups pumpkin puree
  • 1 cup brown sugar, packed
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 tablespoon pumpkin pie spice
  • 1 teaspoon vanilla extract
  • ½ cup chopped walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a greased 9×13-inch baking dish.
  2. In a large bowl, combine flour, oats, brown sugar, baking soda, and salt. Stir in melted butter until well mixed.
  3. Press half of the crumble mixture into the baking dish to form the base layer.
  4. In another bowl, whisk together pumpkin puree, granulated sugar, brown sugar, eggs, pumpkin pie spice, and vanilla extract until smooth.
  5. Spread the pumpkin filling over the crumble base evenly.
  6. Sprinkle the remaining crumble mixture on top and add optional nuts if desired.
  7. Bake for 30-35 minutes until golden brown and set. Allow cooling completely before slicing.
