  • 1/2 bulb garlic
  • 1/3 cup olive oil
  • 1/4 tsp kosher salt
  • 4 leaves sage (or herb of choice)
  • 8 oz feta cheese
  • 32 oz vegetable broth
  • 2 tbsp honey

Instructions

  1. Preheat your oven to 400°F.
  2. In a Dutch oven, combine olive oil, cubed butternut squash, and kosher salt. Toss well.
  3. Nestle the feta cheese in the center and add the halved garlic bulb.
  4. Cover and roast for 45 minutes to an hour until tender.
  5. Remove from oven; squeeze roasted garlic into the pot. Add honey and vegetable broth.
  6. Blend until smooth using a blender or immersion blender.
  7. Taste and adjust seasoning if necessary before serving.
