  • 1 zucchini, diced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1 red onion, sliced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon Italian seasoning
  • 2 cloves garlic, minced
  • 1/2 cup crumbled feta cheese
  • 2 tablespoons chopped fresh basil
  • Juice of 1 lemon

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. On a baking sheet, spread the zucchini, red bell pepper, yellow bell pepper, cherry tomatoes, and red onion. Drizzle with olive oil and season with salt, pepper, Italian seasoning, and minced garlic.
  3. Roast for 20–25 minutes until tender and slightly caramelized.
  4. Meanwhile, bring water to a boil in a pot, add orzo pasta, and cook according to package instructions. Drain and set aside.
  5. In a large mixing bowl, combine roasted vegetables with cooked orzo pasta. Fold in crumbled feta cheese and chopped fresh basil.
  6. Squeeze lemon juice over the mixture and toss gently to combine.
  7. Serve warm or at room temperature.
