  • 15 oz pumpkin puree
  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 2 tsp pumpkin pie spice
  • 16 oz cream cheese
  • 1/2 cup salted butter
  • 1 tsp vanilla extract
  • 2 cups powdered sugar
  • 9 oz salted caramel topping
  • 2 tbsp coarse salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine eggs, brown sugar, vegetable oil, pumpkin puree, and salted caramel topping until well mixed.
  3. In another bowl, whisk together flour, baking powder, baking soda, and pumpkin pie spice. Gradually add to the wet mixture until just combined.
  4. Pour batter into a greased 9×13 inch baking pan and bake for about 36 minutes or until a toothpick comes out clean.
  5. Allow the cake to cool completely before preparing the frosting by beating cream cheese, salted butter, vanilla extract, and powdered sugar until smooth.
  6. Frost the cooled cake and drizzle with additional salted caramel if desired.
