  • 12 oz cooked sausage (cajun, andouille, or smoked)
  • 1 large red bell pepper (diced)
  • 1 large zucchini (sliced)
  • 2 cups corn kernels (about 3 ears of corn)
  • 1 tablespoon olive oil
  • 1/2 teaspoon chili powder
  • Fresh cilantro (for garnish)

Instructions

  1. Gather and prep all ingredients: dice the bell pepper and slice the zucchini.
  2. Heat olive oil in a large skillet over medium heat for about 1 minute.
  3. Add sausage to the skillet and sauté for approximately 5 minutes until browned.
  4. Incorporate diced bell pepper, zucchini, and corn into the skillet; cook for another 5–7 minutes until veggies are tender yet crisp.
  5. Season with chili powder; stir well and cook for an additional minute.
  6. Remove from heat and garnish with fresh cilantro before serving.
