  • 8 to 10 large cloves garlic, very thinly sliced
  • 4 ounces stale bread, torn or thinly sliced
  • 1 tablespoon smoked paprika (pimentón)
  • 6 to 7 cups chicken stock or vegetable broth
  • 4 large eggs, whisked
  • Fine sea salt and freshly ground black pepper, to taste

Instructions

  1. Heat olive oil in a large stockpot over medium heat. Add thinly sliced garlic and sauté until fragrant and lightly golden (2–3 minutes). Stir in smoked paprika.
  2. Add torn stale bread to the pot, tossing to coat in garlic oil. Cook for an additional 3 minutes while stirring frequently.
  3. Pour in 6 cups of chicken stock, breaking down the bread into smaller pieces as it softens. Bring the soup to a strong simmer.
  4. Create a whirlpool by stirring slowly, then gradually pour in whisked eggs while continuing to stir gently to form ribbons.
  5. Taste and season with salt, pepper, and additional smoked paprika if desired. Adjust consistency with more stock if needed.
  6. Ladle into bowls and serve hot.
