  • 2 tablespoons lemon juice (freshly squeezed)
  • 14 ounces unsweetened coconut milk
  • 2 tablespoons parsley (fresh, chopped or cilantro)

  3. Heat oil in a skillet over medium heat; cook chicken for 6-8 minutes per side until browned.
