  • 4 cups water
  • 3 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • ½ teaspoon black pepper
  • Parsley flakes (fresh or dried)

Instructions

  1. Preheat your oven to 385°F (195°C).
  2. Line a baking sheet with parchment paper.
  3. Wash the mini potatoes thoroughly under cold water.
  4. In a bowl, mix cold water with 2 tablespoons of lemon juice. Carve skull faces into each potato, placing them in the lemon water to prevent browning.
  5. In another bowl, combine olive oil, remaining lemon juice, salt, onion powder, garlic powder, paprika, and black pepper. Mix well.
  6. Drain the carved potatoes and toss them in the seasoning oil until evenly coated.
  7. Place the seasoned potatoes face side up on the baking sheet and bake for about 30 minutes or until golden brown and tender.
  8. Garnish with parsley flakes before serving.
