  • 150g sirloin or ribeye steak
  • 2 large eggs
  • Avocado, sliced
  • 1 cup cherry tomatoes, halved
  • 1 tbsp olive oil or butter
  • Salt & freshly cracked black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Pat the steak dry and season both sides with salt and pepper.
  2. Heat olive oil in a skillet over high heat and sear the steak for 2–3 minutes per side for medium-rare. Let rest before slicing.
  3. In the same skillet on medium heat, add oil if needed and crack in the eggs. Cook until whites are set but yolks are runny, about 2–3 minutes.
  4. Assemble your bowl by arranging avocado slices, halved cherry tomatoes, sliced steak, and sunny-side-up eggs.
  5. Garnish with chopped parsley and serve hot.
