  • 6 small flour tortillas
  • ½ cup granulated sugar
  • 1 tbsp ground cinnamon
  • ½ cup unsalted butter, melted
  • 8 oz cream cheese, softened
  • ½ cup powdered sugar
  • 1 tsp vanilla extract
  • ½ cup heavy whipping cream
  • 1 cup fresh or frozen strawberries, chopped
  • ¼ cup granulated sugar
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch mixed with 2 tbsp water

Instructions

  1. Preheat oven to 375°F (190°C). Mix granulated sugar and ground cinnamon in a bowl.
  2. Brush each tortilla with melted butter on both sides, then coat with the cinnamon-sugar mixture. Drape over an oven rack to shape into tacos and bake for 8–10 minutes until golden brown. Cool completely.
  3. For the cheesecake filling, beat softened cream cheese, powdered sugar, and vanilla until smooth. Whip heavy cream until stiff peaks form and fold into the cream cheese mixture. Transfer to a piping bag.
  4. Prepare the strawberry topping by simmering chopped strawberries, sugar, and lemon juice in a saucepan until juices release. Thicken with cornstarch slurry.
  5. Pipe cheesecake filling into each taco shell and top with cooled strawberry sauce before serving.
