  • 1.5 lbs top sirloin steak (or flank/skirt steak)
  • 1 cup potato starch
  • 1 small onion
  • 2 cloves garlic
  • 45 slices ginger
  • 3/4 cup honey
  • 1/4 cup + 2 tbsp light soy sauce
  • 1/2 cup water
  • 1 tbsp hoisin sauce
  • 1 tbsp sesame oil
  • Cornstarch and water for thickening

Instructions

  1. Slice beef against the grain into thin strips and coat with potato starch.
  2. Heat oil in a deep fryer to about 350°F (175°C).
  3. Fry beef in batches until golden brown (3-5 minutes). Drain on paper towels.
  4. In a separate pan, sauté onion, garlic, and ginger until fragrant.
  5. Add honey, soy sauce, water, hoisin sauce, sesame oil, and stir to combine.
  6. Mix cornstarch with water and add it to the sauce to thicken.
  7. Toss the fried beef in the sauce until well-coated.
