  • 2 Sweet Potatoes, quartered
  • 1 Large Tart Apple, peeled and cored
  • 2 Tablespoons Olive Oil
  • 1 Onion, chopped
  • 2 Stalks Celery, chopped
  • 1 Large Carrot, chopped
  • 1 Bay Leaf
  • 5 Cups Chicken Broth
  • 1 Cup Cream (or a plant-based alternative)
  • Juice and zest of 1 Lemon
  • Salt and Pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. On a greased baking sheet, place quartered sweet potatoes and apple; roast for about 40 minutes until tender.
  3. Allow to cool slightly and peel the sweet potatoes.
  4. In a soup pot over medium heat, add olive oil; sauté onion, celery, carrot, and bay leaf until tender.
  5. Remove bay leaf; add roasted sweet potatoes and apple along with chicken broth. Stir well.
  6. Blend the mixture until smooth using an immersion blender or regular blender.
  7. Return to pot; stir in cream (or alternative), lemon juice, and zest. Season with salt and pepper.
