  • 1/4 cup lemon juice (cold)
  • 1 lb sweet potatoes
  • 5 tablespoons unsalted butter (softened)
  • 1 cup dark brown sugar (packed)
  • 3 large eggs
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground ginger
  • 1/4 teaspoon nutmeg
  • 1/8 teaspoon cloves
  • 1 teaspoon salt
  • 1 1/4 cups evaporated milk
  • 1 tablespoon vanilla extract
  • 1 egg (for topping)
  • 1 tablespoon milk (for topping)
  • Whipped cream (for serving)

Instructions

  1. Preheat your oven to 400°F (200°C). Wash the sweet potatoes thoroughly, poke holes in them with a fork, and place them on a baking sheet. Bake for about 45 minutes or until tender.
  2. In a large mixing bowl, combine flour, salt, and sugar. Cut in cold butter using a pastry cutter until the mixture resembles coarse crumbs. Gradually add ice water and lemon juice until a dough forms. Shape into a disc, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  3. Once sweet potatoes are cool enough to handle, peel and mash them in a bowl. Mix in softened butter, dark brown sugar, eggs, cinnamon, ginger, nutmeg, cloves, salt, evaporated milk, and vanilla extract until smooth.
  4. Roll out the chilled dough on a floured surface into your desired shape. Place the crust into your pie dish and trim excess dough. Pour the sweet potato filling into the prepared crust evenly.
  5. Beat one egg with milk; brush over the crust edges for shine. Bake in preheated oven at 350°F (175°C) for about 45–50 minutes or until the filling is set. Let cool before serving with whipped cream on top.
