  • 240ml dairy-free milk
  • 1 teaspoon apple cider vinegar
  • 210g self-raising flour
  • 50g cocoa powder
  • 100g caster sugar
  • 60ml sunflower oil
  • 210g dairy-free block butter (for frosting)
  • 200g icing sugar
  • 20ml aquafaba (chickpea brine)
  • Ground Oreo crumbs (for decoration)
  • Dairy-free dark chocolate (for decoration)

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. In a mixing bowl, combine dairy-free milk and apple cider vinegar; let sit for 5 minutes.
  3. Add sunflower oil to the milk mixture and whisk until smooth.
  4. In another bowl, mix self-raising flour, cocoa powder, caster sugar, baking powder, and bicarbonate of soda.
  5. Combine wet and dry ingredients gently using a spatula until just mixed.
  6. Fill cupcake liners in a muffin tray with batter about two-thirds full. Bake for approximately 20 minutes or until a toothpick comes out clean.
  7. For frosting, beat dairy-free butter until creamy; gradually add icing sugar and aquafaba until fluffy.
  8. Once cooled, frost cupcakes and decorate with ground Oreo crumbs and other toppings.
